FIELD: food industry, medicine, veterinary science, animal husbandry. SUBSTANCE: invention relates to methods for preparing an aqueous beta-carotene-containing emulsion. Method involves mixing beta-carotene with nonionogenic surface-active substance in the presence of vitamin E and the following stirring the prepared solution with water-soluble antioxidant. As source of beta-carotene the emulsion contains carotene-lipid complex extracted from biomass of culture Blakeslea trispora. Mixing carotene-lipid complex with surface-active substance is carried out at 130-150 C and fat-soluble antioxidant is added additionally. After stirring the prepared solution water-soluble antioxidant is added at 60-70 C and mixture is stirred and cooled to the room temperature. Ready emulsion contains the following components: carotene-lipid complex from biomass Blakeslea trispora, nonionogenic surface-active substance of type Tween-80, fat-soluble antioxidant, vitamin E, water-soluble antioxidant and water taken in the definite ratio of components. Invention provides the enhancement of stability of beta-carotene in process of emulsion storage and to enhance coloring intensity of ready emulsion. Emulsion can be used for prophylaxis and treatment of humans and animals with vitamin A deficiency.
