FIELD: food-processing industry, in particular, processing of meat product with knock waves. SUBSTANCE: method involves placing product into holding vessel filled with liquid. Holding vessel has acoustic impedance close to that of liquid. Knock wave generator (chemical blast type or capacitor discharge electrodes) creates knock wave, which passes through holding vessel without substantial reflection owing to the fact that impedance of holding vessel is close to that of liquid.
