FIELD: food-processing industry. SUBSTANCE: method involves wetting roots; washing; cutting; providing thermal processing of ground mass; drying to moisture content less than 6%; grinding to powdered state; cooling and packing ready product. Thermal processing of ground beet is provided by microwave heating process conducted at temperature of 100 C for 15 min, with following dispersing of heated mass into 600-1,000 micron sized particles and processing by infrared radiation at incident beam density of 18.5-23.5 kW/sq. m until temperature inside mass layer is 85-92 C. Sugar beet powder may be used as sugar substitute in baking and bakery confectionery industry.
