SUBSTANCE: method involves preparing raw material and components; charging into cans; sterilizing and packing; using poultry chest and leg parts as basic raw material; before charging into cans, holding poultry meat pieces in protein-fat emulsion for 12-24 hours; preparing protein-fat emulsion by mixing egg mass, vegetable oil, food albumen, dry sea kale, mineral enricher produced from hen egg shell, folic acid, sweet pepper, edible salt and sweet water for 8-12 min at mixture temperature of 10-12 C.
