FIELD: chemical-pharmaceutical industry. SUBSTANCE: method involves providing multiple soaking of sugar crystals with building-up syrup comprising water, sugar and starch syrup; sprinkling with saccharide powder until nuclei of required size are obtained; drying and gauging on sieves, with saccharide powder being mixture of kestose and starch used in the ratio of 3: 1; after 5-8 fold procedure of soaking with syrup and sprinkling procedure, heating resultant mass to temperature of 65-75 C and cooling at cooling rate of 5.6-6.0 C/min to temperature of 40-43 C; after 10-15 fold soaking with syrup and sprinkling with kestose and starch mixture at temperature of 40-43 C, cooling sugar grits at cooling rate of 2.1-2.5 C/min to room temperature. Method allows product with porous outer surface and increased hardness to be obtained. EFFECT: simplified method and improved quality of product. 1 tbl
