FIELD: microbiology. SUBSTANCE: method involves preparing fat-free milk solution having weight ratio of dry substances of 19-22%; setting active acidity value of 6.6-6.9; heating solution to temperature of 95-97 C; providing hydrolysis of protein fraction by means of pancreatin enzyme preparation with proteolytic activity of 4, 5 units/g used in an amount of 0.32- 0.35% or by means of cattle pancreas farce with proteolytic activity of 4.5 units/g used in an amount of 3.2-3.5%; providing hydrolysis at temperature of 48-53 C until accumulation of 280-330 mg% of amino nitrogen in the presence 0.30-0.35% of chloroform; upon completion of hydrolysis process before heating process, introducing corn extract as growth additive into hydrolysate, said corn extract having weight ratio of dry substances of 25-27% and being introduced in an amount of 10-12%; concentrating filtrate until weight ratio of dry substances reaches 33-35% and drying by spraying process with temperature at drying chamber inlet end being 160-170 C and at drying chamber outlet end 80-85 C. Method allows fat-free milk to be obtained which contains soluble product of hydrolysis of protein fraction rich in growth additive. Such milk is suitable for usage as base for liquid and solid nutritive media used for accounting and controlling of microorganisms in milk products. EFFECT: increased efficiency and simplified method.
