FIELD: food industry.

SUBSTANCE: invention relates to dairy industry and can be used to obtain concentrate of block milk whey with bifidogenic properties, enriched with lactulose and hydrolizate of defatted milk. Method of concentrate of block milk whey production includes gathering and reservation of milk whey, its warming, separating, pasteurisation and cooling down, preparing of defatted milk hydrolizate, enriching of prepared milk whey with defatted milk hydrolizate in quantity of 5,5±1%, isomerisation of lactose into lactulose by warming up to temperature 82±4°C, adding calcium hydroxide till pH value 10.5-11.5, incubation during 34±2 minutes and neutralisation with acid whey, condensation of mixture, adding of consistency stabiliser.

EFFECT: obtained concentrate has bifidogenic properties not only in vitro but also in vivo in bowel of human and farm animals.
