FIELD: technological processes.
SUBSTANCE: method stipulates pasteurisation of milk whey, which is mixed with hydrolyzate of non-fat milk in amount of 2.5-10%, then lactose is isomerised in lactulose, milk whey that is enriched with hydrolyzate is neutralized ith solution of citric acid until pH is 6.3-6.7. Then biomass of Bifidobacteria is introduced in amount of 5-10% from volume of whey with titre of 108-109 cl/cm3 and is soured at temperature of 36-38°C for 18-24 hours until concentrate with titre of at least 109-1010 cl/cm3 is prepared, then condensed down to 25-30% of milk solids and dried.
EFFECT: biological and nutritious value of product is increased.
