FIELD: microbiology.
SUBSTANCE: invention relates to protein hydrolyzate (peptone) production useful as quickly digestible nitrogen source in various microbiological nutrient media. Claimed method includes cheese whey proteins heat coagulation, isolation of coagulated proteins, providing hydrolysis mixture, enzyme hydrolysis of proteins with proteolytic enzyme preparations, filtration, concentration, and drying. Protein heat coagulation is carried out in cheese whey, coagulated proteins are isolated by self-pressing to form protein mass containing 19-21 % of dry matters and having non-protein and protein component ration of 1:3.5-1:4.0. Hydrolysis mixture is prepared by blending of protein mass with aqueous solution of pancreatin enzyme preparation or mince from pancreas of cattle preheated up to 28-30°C. Hydrolysis is carried out at 37-45°C for 80-90 h in presence of 0.30-0.33 vol% of chloroform/ Filtrate is concentrated, mixed with disubstituted potassium phosphate, and spray dried.
EFFECT: protein hydrolyzate of improved quality and storage stability.
