FIELD: preparative biochemistry, food industry. SUBSTANCE: invention relates to manufacturing liquid fats. Method involves freezing material of biological origin and it cutting for small parts. For each specific species of biological material the temperature point is established when denaturation of proteins of this material begins by formation of agglomerates visible as thread or precipitate in material. Then biological material is defrosted to temperature being lower as compared with the established temperature point for denaturation of proteins and proteins and lipids are separated from formed mixture by the known method.
