FIELD: food industry.
SUBSTANCE: present invention relates to food industry. The food composition includes: a) protein component containing non-denatured whey protein at a concentration of 40% - 95% of total concentration of protein represented by whey protein concentrate and/or whey concentrate and/or non-concentrated whey and/or their mixture where denaturation indicator is 50% - 99%; and other proteins at a concentration of less than 40% of total protein concentration and b) lipid component at a concentration of 1% - 70% of total composition weight. This composition production method involves: mixing of the protein and the lipid components, their heating, transporting the mixture, its maintaining. Application of the composition in food products or beverages or as food products or beverages.
EFFECT: invention allows to enhance stability of the composition and extend its storage life.
