FIELD: flour industry; methods of production of flour by short-cut technology. SUBSTANCE: proposed method includes separation of foreign admixtures from grain mass, treatment of grain surface, moistening and soaking, stage-by-stage grinding of grain in breaking process, separation of fractions of cereal products, enrichment of these products followed by grinding in roller mills of grinding systems, forming grades of flour and separation of bran. Extraction of cereal-dunst products at breaking system I is performed to 43-47%, at breaking system II to 50- 55% and at breaking system III to 40-45% relative to product receiver at respective system. Coarse and medium grits obtained at breaking systems I and II are directed to 1st and 2nd sieve purifying systems for enrichment, thus obtaining grits at ash content of 0.40-0.60% by pass of lower tier of sieves. Then, they are simultaneously ground at 1st grinding system; tailings obtained at upper and medium tiers of sieves of 1st and 2nd sieve purifying systems ate combined and are directed to second bran-cleaning system. Products obtained as tails from lower tier of sieves of first and second sieve purifying systems are combined a are enriched for the second time at reference sieve purifying system. At enrichment of fine grits obtained at three breaking systems at third sieve purifying system by first pass of lower tier of sieves of third sieve purifying system enriched grits at ash content of 0.40-0.47% are obtained which are then ground at 1st grinding system. After second pass of lower tier of sieves of third sieve purifying system, enriched grits at ash content of 0.60-0.75% are obtained which are then ground at 2nd grinding system; tailings from third sieve purifying system are directed to reference sieve purifying system for repeated enrichment. Enriched products obtained by pass of lower tier of sieves of reference sieve purifying system at ash content of 0.75-0.90% are directed to 2nd grinding system and tailings obtained at reference sieve purifying system are directed to second bran- cleaning system.
