FIELD: semolina production.
SUBSTANCE: invention relates to the production of semolina from soft wheat for the food industry. The initial raw material is preliminarily cleaned, then the soft wheat grain is moistened to a moisture content of 16.0-16.5% and softened for 12-16 hours. After that, the prepared grain of soft wheat is crushed on roller machines with the location of the corrugation tip on the tip (t/t) with a speed of rotation of the fast roller from 5.0 to 7.0 m/s, with a ratio of circular speeds of fast and slow rotating rollers from 1, 5 to 2.5, with a density of cutting rollers from 6 to 10 pieces per 1 cm, with a corrugation slope of 8 to 10%. Next, soft wheat milling products are sorted in sieving on sieves of various sizes and enriched on sieve machines.
EFFECT: invention makes it possible to develop an effective technology for processing soft wheat grain into semolina, which helps to increase the yield of semolina for the food industry.
