FIELD: sugar industry.

SUBSTANCE: method involves weighting a milk of lime specimen with temperature 22-28 C and separation of lime solid particles from dispersion medium by centrifugation of a milk of lime specimen in filtering centrifuge. After centrifugation of milk of lime mass part of sugar in dispersion medium is determined by one of known methods. Then mass part of saccharate-bound lime in dispersion medium is determined by the following formula: GCaO = (0.006 x CX2 + 0.0395 x CX + 0.1074) - 0.119 wherein GCaO is a mass part of saccharate-bound lime in milk of lime dispersion medium, % CaO to mass of dispersion medium; CX is a mass part of sucrose in milk of lime dispersion medium, %. The calculation of the content of active lime is carried out by the following formula: ACaO = PCaO - GCaO wherein ACaO is the content of active lime in milk of lime dispersion medium, % CaO to dispersion medium mass; PCaO is the content of calcium hydroxide in milk of lime dispersion medium determined by one of the known methods, % CaO to dispersion medium mass. Invention provides precision of the quality assay of milk of lime by taking into account saccharate-bound calcium mass that is not an active lime.
