SUBSTANCE: invention can be used for preparing fermented-milk foodstuffs. The strain L. bulgaricus, CNCM 1-1968, carries nonsence mutation in at least one of sequences encoding lactose operon and this strain has no β-galactosidase activity. Method involves preparing the ferment for lactobacillus fermentation including above indicated strain and used for preparing fermented-mild foodstuffs where glucose is added. Yoghurt is preferable such foodstuffs. Invention provides low secondary souring product and retaining cell population and their high surviving.
EFFECT: improved preparing method, valuable properties of strain and ferment.
