SUBSTANCE: lactose-negative strains Lactobacillus helveticus CNCM 1-3504, Lactobacillus helveticus CNCM 1-3505 and Lactobacillus helveticus CNCM 1-3508 do not have the ability to transform lactose in lactic acid and are able to producing hypotensive tripeptides IPP and VPP; they are used in a method of producing a fermented milk product exhibiting antihypertensive properties. The strains are prepared by contact of at least one strain and an effective amount of Streptozocin with lactose added.
EFFECT: stable shelf-life peptide content in the product and high strain population.
