FIELD: obtaining of products simulating natural fish caviar, in particular, caviar of salmons.
SUBSTANCE: method involves preparing forming mixture comprising fat component, egg albumen, egg yolk, and food colorant; forming said mixture in the form of granules in liquid immiscible with water at temperature of 60-950C, with liver oil of shark, in particular, Greenland shark being used as fat component. Said liver oil is preliminarily emulsified in egg yolk with following adding of other components to resultant emulsion and mixing thereof. Method allows analog of salmon fish caviar to be produced on the base of shark liver oil.
EFFECT: increased biological value of product.
