FIELD: food processing industry, foodstuff imitating natural fish caviar, in particular sturgeon caviar.
SUBSTANCE: formable mixture is provided containing fat component, yolk, white and food grade dye. Mixture is formed in granule form in water immiscible liquid at 60-95°C. Shark liver oil is used as fat component. Oil is previously emulsified in yolk, then lyophilically dried shark cartilage, white and food grade dye are added whilst stirring into obtained emulsion.
EFFECT: sturgeon caviar analog with biological value and increased stability.
