FIELD: food industry.
SUBSTANCE: invention relates to simulated caviar, more particularly to simulated sturgeon-species caviar. Analog is produced in the form of grains of gel made from egg yolk (20-90%), egg white (5-50%), food colorant (0.05-3%), and a fat component (1-40%), said fat component being shark liver oil. Product also contains 1-5% edible salt. Such composition provides lower deformation of grains and regularity of their shape, which would increase granulation process stability and decrease or virtually exclude degradation of grains. Grain cohesion is also increased to provide non-degradable product as a whole. Shelf time of product is considerably prolonged without pasteurization, which preserves organoleptic properties of product and biological value thereof at lower consumption of power. Grains are transparent to impart better appearance to product, which is practically undistinguishable outwardly from genuine product.
EFFECT: improved consumer's properties of product.
