FIELD: microbiology, medicine, food and perfume industry.
SUBSTANCE: method can be used in producing extracts of autolyzed yeast. Yeast suspension is subjected for autolysis at weak acid pH value in the presence of oleic acid at heating to temperature 40-45oC. At this temperature pH value is brought about to 6.0-8.0 and 1,3-dihydroxy-5-methylbenzene is added additionally in the concentration 0.4-1.6 g/l. The process is carried out at temperature 40-55oC for 6-8 h. Also, in the process of autolysis and at pH value 6.0-8.0 neutral-alkaline protease can be added to suspension in the concentration 1.6-2.2% with respect to absolutely dry protein. Method provides increasing the degree of hydrolysis of yeast cells by 20-40%, to intensify the autolysis process of yeast biomass with enhancing hydrolysis intensity and to enhance quality of preparing products being without increase of the process duration.
EFFECT: improved autolysis method.
