FIELD: microbiological, medicinal, and food industries. SUBSTANCE: biomass of microorganisms is frozen, unfrozen, and suspended in water to content of dry substances 3-20%. To suspension, preservative and inhibitor of nucleodepolymerases (phosphates in quantity 0.15-0.25%) and stabilizers for proteases or autolysines (magnesium and calcium chlorides in quantity 0.025-0.05%) are added. Mixture is heated to 40-58 C, aged at this temperature (pH 4.5- 8.0) for 1 to 8 hr, plasmolyzed, and separated into extract and remaining cells that are then dried. Sodium in quantities 0.4 to 0.6% may also be advantageously added. Method can be used in microbiological synthesis and secondary processing of synthesis products to increase biological validity of biomass, in production of food and taste additives, and drug production.
