FIELD: biotechnology, hydrolysis industry, wine-making industry, industrial biochemistry.

SUBSTANCE: invention is designated for preparing the purified pectolytic enzyme preparation. Method involves concentrating cultural fluid or crude enzyme preparation from Aspergillus foetidus and stabilizing that is carried out by addition of polyhydric alcohol, chelating agent and any inert protein with molecular mass above 15 kDa. Ultrafiltration is carried out at 35-40oC at constant addition of acetate buffer solution containing polyhydric alcohol and chelating agent. Enzymes are isolated using strong acid cation-exchange resin followed by their desorption, desalting, diafiltration and lyophilic drying. Method provides preparing pectolytic enzyme preparation with higher degree of purification, high yield by activity and increasing specific activity of enzymes (above 20 times).
