SUBSTANCE: invention allows to obtain pectolytic enzyme preparation free of pectin substances and carbohydrates with yield 57-58% and increased specific activity of polygalacturonase in end product by 6.0-6.2-fold as compared with the parent activity For removal of inert proteins, peptides, pectin substances, carbohydrates and salts cultural fluids from fungal producers of pectinases preparing by the use of beet pectin as substrate are treated by microporous activated carbon, anion- and cation-exchange resins at decreased temperature. Enzyme is isolated from filtrate by means of adsorption in treatment with calcium phosphate gel followed by extraction of gel with phosphate buffer. Extract is stabilized by acidification to pH below 4.5, desalted and concentrated by diafiltration and ultrafiltration and dried by lyophilization.
