FIELD: food industry.
SUBSTANCE: invention relates to estimating hygienic safety of foot products and unprocessed food materials, in particular to determining toxicity of 1-nitrosamines with the aid of reverse gas chromatography technique. Food sample is sterilized and mixed with solid glass carrier, after which through chromatographic columns is passed eluent composed of pentane, which dies not mix with moisture of sample. Aqueous azeotrop is distilled off the extract and eluent is recycled. Extract is then introduced into capillary chromatographic column, whose inside surface is modified by hydrophobic layer C16, at temperature between 30 and 40oC. Thereafter, mixture of saturated cyclic and aromatic hydrocarbons is passed through column with sample and through column, into which dimethyl-and diethylnitrosoamines with known weight were added. Retention values for selected pair of hydrocarbons with the same carbon atoms are measured for the sample and for nitrosamine additives, after which one identifies existence of chromatographic nitrosamine zone from contribution of nitrosamine groups and determines number of CH bonds in nitrosamines for food sample, which allows one to calculate summary content of nitrosamines to determine toxicity by comparing calculated value with hygienic norm.
EFFECT: improved reliability of determination.
