SUBSTANCE: invention relates to medical toxicology studies. Method for quantitative determination of N-nitrosamines comprises sample preparation, solid-phase extraction (TPHE), and determination of specific nitrosamines according to a calibration chart, during sample preparation 200 ml of distilled water preliminary heated up to +55 °C are added to 20 g of the sample of crushed smoked meat products, the sample is maintained for 30 minutes and further filtrated, 1.5 g of potassium hydroxide are added to the filtrate, the resultant mixture of filtrate and potassium hydroxide is subjected to distillation by water vapor overheated to tsteam generator=100±5 °C to obtain 70 cm3 of distillate, said distillate is subjected to TPHE, the resultant eluates are analyzed by chromatography-mass spectrometry with selection of nine N-nitrosamines.

EFFECT: method for quantitative determination of N-nitrosamines is proposed.
