FIELD: sugar industry and technology.
SUBSTANCE: method involves pre-defecation, defecation, the first saturation, filtration, the second saturation, condensing juice suspension after the second saturation and its activation by saturation up to pH 7.5-8.0. Vegetable oil phosphatides are added to an activated juice suspension in the concentration 0.005-0.015% to juice mass. Then activated suspension is returned to pre-defecation. Invention provides enhancing effect in purifying juice, reducing chromaticity of juice and mass part of salts in purified juice.
EFFECT: improved purifying method.
