FIELD: food industry, biotechnology, microbiology.
SUBSTANCE: invention relates to microbiological methods in assay of food raw and foodstuffs, in particular, milk and dairy products. The modified dry nutrient Kessler's medium used for indication and quantitation of microorganisms of intestine bacillus group in food industry comprises lactopeptone, lactose, dry bile, crystal violet taken in the following ratio of components, wt.-%: lactopeptone, 50.94 ± 1.94; lactose, 29.94 ± 0.94; dry bile, 19.00 ± 1.00; crystal violet, 0.12 ± 0.01. New medium is economy, suitable in preparing and applying and can be stored for up 18 months under hermeticity conditions and non-regulated temperature conditions. Invention can be used for control of sanitary-hygiene state in milk-processing and other branches of food industry.
