FIELD: food processing industry.
SUBSTANCE: method for production of semi-manufactured product such as garnish potato. Potato after washing and inspection and prior to peeling is treated with preparation obtained from biomass of Mortierella humilis micromycete according to claimed technology and seasoned for nearly 5 h. Then treated potato is post-peeled, cut, precooked, and packaged under vacuum.
EFFECT: garnish potato of improved organoleptic properties.
