FIELD: food processing industry.
SUBSTANCE: method for production of semi-manufactured product such as garnish potato. Potato after washing and inspection and prior to peeling is treated with preparation obtained from biomass of Mortierella pulchella micromycete according to claimed technology and seasoned. Then treated potato is post-peeled, cut, precooked, and packaged into packs under vacuum. Packs are sealed and pasteurized.
EFFECT: garnish potato of improved organoleptic properties.
