FIELD: oil and fat processing industry.
SUBSTANCE: claimed product contains at least one virgin olive oil and sterol and/or stanol ester with fatty acids, wherein fatty acid part contains less than 5 mass % of saturated fatty acids and more than 60 mass % of unsaturated fatty acids. Method for product production thereof includes sterol and/or stanol etherifying with fatty acid source to form ester mixture and mixture dissolution in at least one virgin olive oil. Method for product production includes dissolution of vegetable sterol and/or stanol esters with fatty acid, obtained from vegetable oils with high content of polyunsaturated, in at least one virgin olive oil and crystallization lipids with higher melting point from oil obtained after dissolution step at temperature of 0-30°C. In abovementioned mixture less than 2 mass % of fatty acid phase contains stearic acid.
EFFECT: product with decreased cholesterol content.
