FIELD: food industry.
SUBSTANCE: product suitable for consumption as food contains 15 - 80 wt % of triglycerides, 20 - 85 wt % of a filler and maximum15 wt % of water where the triglycerides contain acid residues in an amount of 20 - 70 wt % of the total quantity of SAFA (saturated fatty acids) and maximum 5 wt % of TFA (transfatty acids) with C8, C10 and C12 fatty acids present in a ratio of (C8+C10+C12)/total SAFA quantity equal to at least 10%, the weight ratio of (C8+C10)/C12 equal to at least 5% while the weight ratio of D/B equal to at least 1.5, the weight ratio of B/total SAFA quantity being maximum 0.5; D stands for the sum total of all MUFA and PUFA quantities, B stands for the sum total of C14 and C16 fatty acids quantities; the triglyceride composition SFC (solid fat content) at 20°C is at least 5 wt %.
EFFECT: invention enables production of products that contain fats with a minimum quantity of C8-C12 residues that are produced without genetic modification and additionally include other dry ingredients; such products, after consumption, are better balanced in terms of nutrition and, at the same time, display good solidity and texture properties.
