FIELD: food industry.
SUBSTANCE: present invention relates to food industry, in particular, to production of storage stable products, in particular, beverages containing polyphenols. The method envisages mixing the ingredients, a stage of the product pH reducing by least nearly 0.2 for pH level to be from nearly 4.8 to nearly 6.8 and aseptic treatment.
EFFECT: invention allows to prevent polyphenols loss during heat treatment of products containing polyphenols.
