FIELD: food processing industry, in particular cannery industry, production of half-finished garnish potato.
SUBSTANCE: claimed method includes potato washing, inspection, treatment with lipid-containing extract obtained from biomass of Mortierella verticillata micromycete and conditioning. Further method includes peeling, post-peeling, cutting and roasting to produce half-finished product. Obtained product is pre-packed in vacuum into packets followed by sealing and pasteurization.
EFFECT: garnish potato of improved organoleptic properties.
