FIELD: sugar industry.
SUBSTANCE: method involves preparing feeding water by introducing reactant therein until pH value is 6.0-6.5, with sulfuric acid being used as reactant; heating water to temperature of 68-72°C and providing electrochemical water treatment at electric field intensity of 8.1-10.3 V/cm for 3-7 min; feeding thus treated water into diffusion apparatus; providing extraction of beet chips while discharging diffusion juice from apparatus. Method allows juice purity to be increased by 1.3-1.8% as compared to prior art method and colloid dispersity substance content to be reduced by 78%.
EFFECT: improved quality of juice by increased purity and reduced content of colloid dispersity substance.
