FIELD: sugar industry. SUBSTANCE: method involves beet milling to chips, steaming by the saturated steam at 80-82 C under pressure 45-47 kPa taken at amount 10-15% to beet mass and catholyte at pH = 5.0-5.5, redox-potential - from 0.8 to 1.1 at 78-80 C. Method involves the use also extractant obtained by electroactivation in cathode chamber of diaphragm electrolyzer taken at amount 20-30% of beet mass containing 0.01-0.03% polyvalent metal sulfate or chloride of beet mass. Beet chips were extracted with extractant and diffusion juice is obtained; then juice is purified with lime up to pH = 10.8-11.6, filtered and heated to 80-85 C. Heated juice is saturated to pH = 8.8-9.2, filtered, sulfitized and condensed to 65-68%. Aluminium sulfate is added to the obtained diffusion juice at amount 0.004-0.014% of beet mass, electroactivated for 60-100 s in anode chamber of diaphragm electrolyzer up to pH = 4.0-4.5, redox-potential is 0.15-0.28 v followed by exposition at 55-65 C for 6-8 min.
