FIELD: food-processing industry, in particular, bread-making, more particular, preparing of grain bread for everyday, dietary and therapeutic-prophylactic feeding.
SUBSTANCE: bread composition contains dispersed soaked wheat grain, edible salt, sunflower oil, compressed yeast, dry starter "Agram", water, and also additive produced by mixing of wheat flour having increased content of branny particles with vitamin additive "Valetec-8", said components being used in the ratio of 10:1. Composition components are used in predetermined ratio.
EFFECT: minimal crumbling, improved form keeping capacity, improved organoleptical properties and taste.
