FIELD: food-processing industry, in particular, production from confectionery mass of special prophylactic confectioneries, in particular, candies and fillers for farinaceous confectioneries.
SUBSTANCE: method involves mixing sugar-containing component with fatty component; rolling resulting mixture; melting and tempering rolled mixture; using sugar powder and/or honey as sugar-containing component; at mixing stage additionally introducing into mass functional additive such as bee pollen, in particular, pollen load or beebread, preliminarily ground to the size of sugar powder particle. Components for producing of confectionery mass are used in predetermined ratio. Confectionery mass produced by such method is used for obtaining of praline and cream candy compositions, and also as filler for oiling of wafers.
EFFECT: reduced sugar content and energy value and prolonged shelf life of confectionery products.
