SUBSTANCE: lamb sausage contains as meat raw materials mutton, nonfat pork, fat back; as well as table salt, sodium nitrite, nutmeg, milled pepper, sugar, hydrated pumpkin powder, with particle size of 0.2-0.6 mm in ratio (pumpkin powder and water)/ (meat raw materials) of 0.03-0.05:0.15-0.25:1. Component ratio also is disclosed.
EFFECT: sausage with high content of iron, dietary fibers, pectin and having improved organoleptic and antiradiation action.
