FIELD: biotechnology, microbiology, food processing industry.
SUBSTANCE: claimed method includes providing of aqueous cultural medium, bakery yeast introducing and conditioning thereof. Water for cultural medium is pretreated with non-filtered modulated ultraviolet light containing in radiant flux not less than 30 % of ultraviolet quanta having wavelength shorter 350 nm during period of time sufficient to increase water viscosity by 2 times or more. Parameters which characterize alteration of water internal energy are measured before water treatment and as long as treatment endures.
EFFECT: intensified process for baking yeast activation.
