FIELD: equipment and method for producing of bread.
SUBSTANCE: method involves step of forming bread dough piece; additional forming step for forming of dough bar by rolling or folding of sheet; step of cutting dough bar; and step of placing dough bar pieces in baking pan so that at least one surface of cut is oriented upward. Apparatus has feeding device, forming device, dough bar cutting device and device for placing dough bar pieces so that at least one surface of cut is extending upward from baking pan. Construction and method allow air bubbles accumulated between dough bar layers to be released from cut surface of dough bar pieces upon rising of dough and expanding at fermentation and baking steps.
EFFECT: increased efficiency and improved quality of bread.
