FIELD: food industry.
SUBSTANCE: invention relates to the food industry, specifically to a continuous method for making bread chips and a continuous line for production thereof. Continuous sheet of bread dough is rolled. Said sheet of dough is longitudinally cut into continuous strips. Continuous strip of dough is cooked in a continuous oven to produce a continuous tubular bread having a cavity, upper and lower surfaces. Resulting bread is longitudinally divided into an upper half and a lower half using a separation mechanism by means of a vacuum device comprising an upper vacuum conveyor connected to the upper surface of the bread of a continuous tubular shape. Bread with a continuous tubular shape is cured for less than about 60 seconds. Bread with tubular shape is cut into small pieces using a trimming device. Continuous production line for producing bread chips comprises a rolling unit communicating with the cutting device, a cutting device further communicating with the oven, an oven further communicating with the first radiofrequency dryer, a first radio frequency dryer further communicating with the trimming device, and further comprises a separating device positioned between the oven and the first radio frequency dryer and communicating therewith. Conveyor between the oven and the separating device comprises an upper vacuum conveyor connected to the upper surface of the transported bread product. Absence of long steps of curing and cooling in ambient conditions eliminates the need for a separate storage area for bread.
EFFECT: invention makes it possible to reduce breakage and loss of the product, increase its uniformity.
