FIELD: food-processing industry, in particular, production of biologically active additives for food produced from sea hydrobionts.
SUBSTANCE: method involves providing multiple-staged drying of urchin spawn in vacuum drying drum-type apparatus and simultaneously grinding resultant product: first stage including drying of spawn at temperature of heat-carrier of 60-70 C and temperature within drying chamber of 30-35 C for 3.5-4.5 hours; placing milling bodies into drying chamber and continuing drying process for another 2.5-3.0 hours, second stage including reducing temperature of heat-carrier to 40-50 C and drying spawn for 2.0-2.5 hours at temperature within drying chamber of 28-32 C. Urchin spawn is placed into drying chamber in frozen state.
EFFECT: elimination of oxidation processes in crude material and ready product, provision for retention of biologically active substances contained in natural urchin spawn, increased efficiency, and reduced consumption of power for obtaining of ready product.
