FIELD: shrimp processing.
SUBSTANCE: shells and heads of commercial shrimp Pandalus borealis or Pandalus hypsinotus are washed with water. Demineralization is carried out with a mixture of citric and malic acids, the concentration of which is prepared based on their dissociation constants with a molar ratio of acid and calcium of 2:1. The mixture is heated at 80±5°C for 2 hours, then immediately cooled to room temperature. The remaining shells are removed using a strainer, the resulting solution is adjusted to pH 7.0-7.5 with NaOH solution, the precipitate is washed twice with deionized water and dried in an oven to a moisture content of not more than 5% to obtain the finished product.
EFFECT: production of calcium malate-citrate, expanding the base of natural raw materials for obtaining valuable compounds, waste-free shrimp processing technology.
