Method of producing biologically active additive to food from caviar of sea urchins includes sublimation drying in three stages at preset temperature and time regimes. The invention also deals with biologically active substance to food prepared by said method. Said additive increases food condition of man at its using due to keeping biologically active substances and its native properties.
