FIELD: food-processing industry, in particular, protein production.
SUBSTANCE: method involves providing alkaline extraction of raw material; separating extract from small shot; separating starch-protein fraction and protein product from extract, followed by neutralization and washing thereof; introducing citric acid at extraction stage, said citric acid being used in an amount of 0.05-0.2% by weight of extractant, followed by neutralization and washing of protein product with water or 0.2-0.3%-solution of sorbic or benzoic acid, or, otherwise, introducing citric acid at protein product washing stage in an amount of 0.5-2.0% by weight of washing water.
EFFECT: improved quality and functional properties of protein product, increased storage life and reduced content of heavy metals in protein product.
