FIELD: improved method for extraction of cocoa polyphenols, including catechine, epicatechine, and oligomers of cocoa procyanidines from cocoa dry matter.

SUBSTANCE: continuous method for extraction of cocoa polyphenols from at least partially defatted cocoa dry matter using acidified aqueous organic solvent applicable for dissolving of abovementioned cocoa polyphenols includes a) contacting of set of cells containing cocoa dry matter with solvent counterflow; b) recovery of cocoa extract; and c) recirculation of cocoa extract. Method for selective extraction of high molecular procyanidine cocoa oligomers from at least partially defatted cocoa dry matter obtained from non-roasted cocoa beans includes a) extraction of cocoa dry matter with ethyl acetate; b) recovering of extracted cocoa dry matter; c) extraction of recovered cocoa dry matter with solvent selected from acetone, ethanol and aqueous mixtures thereof; d) separation of cocoa dry matter from cocoa extract; and e) drying of cocoa extract. Method for selective extraction of low molecular procyanidine cocoa oligomers from at least partially defatted cocoa dry matter obtained from non-roasted cocoa beans includes extraction of cocoa dry matter with methyl acetate or ethyl acetate. Cocoa extract may be obtained by any of abovementioned methods and essentially comprises at least tetramers and higher olygomers.

EFFECT: improved method for extraction of cocoa polyphenols.
