FIELD: continuous method for extraction of cocoa polyphenols useful in cocoa polyphenol solubilization.
SUBSTANCE: method for extraction of cocoa polyphenols containing catechine, epicatechine and procyanidine cocoa oligomers from partially or fully defatted cocoa dry maters using of non-acidified aqueous solvent includes contacting a number of cells containing cocoa dry matter with counter flowing aqueous solvent; isolation of cocoa extract and recirculation of cocoa extract. Procyanidine yield depends on used cocoa beans, solvent, solvent pH, and extraction temperature. Extraction parameters may be optimized to increase procyanidine yield and extract selectively high molecular or low molecular oligomers. Method for selective extraction includes countercurrent extraction wherein cocoa extract is recirculated. Cocoa extract produced by this method also is disclosed. Extraction is carried out at higher temperature than under extraction using acidified solvent.
EFFECT: improved method for producing of cocoa extract.
