FIELD: production of juice and other acidic beverages.
SUBSTANCE: protein-stabilizing agent contains pectin with high content of methoxy groups and propylene glycol alginate in weight ratio from 0.5:1 to 3.5:1. Compositions for suspending in aqueous acidic medium contain protein material and said protein-stabilizing agent. Also invention relates to aqueous acidic protein suspension having pH 3.0-5.5 and containing stabilized protein material suspension and abovementioned protein-stabilizing agent in specific component ratio.
EFFECT: protein-containing nutritive beverage with reduced viscosity and low cost.
