SUBSTANCE: method involves cleaning pectin- methylesterase; adding said ferment to pectin for producing block-fermentatively desterified pectin, with recombinant DNA procedure being used for producing desterified pectin; adding block-fermentatively desterified pectin into acid medium including at least one protein; stabilizing said protein with the use of block-fermentatively desterified pectin.
