FIELD: food industry.
SUBSTANCE: invention relates to the production of food products and food ingredients, more specifically plant-based fibrous structures, for use in vegan products, such as meat analogues. A method is proposed for the production of a protein-based food fibrous structure, including bringing an aqueous solution of non-denaturated potato protein into contact with carboxymethylcellulose (CMC) with Mw of at least 150,000 Dalton (Da) to obtain a fiber-forming solution. At the same time, this fiber-forming solution has the total dry matter content (TDM) in a range from 0.5 to 15%. In this case, the specified bringing into contact is carried out at pH from 2 to 5 and mixing, thereby causing the formation of a food fibrous structure based on potato protein. The fiber-forming solution or the food fibrous structure based on potato protein are used to obtain a food product. The specified food product is preferably a food product for vegetarians or vegans.
EFFECT: invention allows for obtaining a fibrous structure based on potato protein used as a texturing agent in food products.
